INGREDIENTS
Recipe per 1 pound of meat (with optional beans)
1 lb ground beef or 1 lb ground turkey
1 cup chopped sweet onion (1 large)
2 garlic cloves, finely chopped or season with garlic powder
1 3⁄4 cups thick & chunky salsa - I don’t use salsa
1 3⁄4 cups refried beans - I don’t use beans
1 medium can of mild enchilada sauce
Optional - 1/2 cup of catsup (this takes some of the tart taste away from the enchilada sauce)
12 (6 inch) corn tortillas, sliced in half, divided
2 cups shredded mild cheddar cheese, divided (8 ounces) or Mixture of Cheese of your choice
4-5 stalks of sliced green onion (optional)
Side of guacamole and sour cream
2 med cans of sliced black Olives
Diced 1 red pepper
Optional fresh cut Mushrooms
DIRECTIONS
Preheat oven to 375 degrees.
Season and Cook beef, turkey or chicken onion and garlic in large skillet until beef is browned then drain.
Stir fry in Olive oil veggies. When veggies are softened stir in salsa, beans, enchilada sauce: I add catsup to the sauce. It takes away the bitter taste of the enchilada sauce
Bring to a boil.
Reduce heat to low; cook, stirring frequently, for 5 to 6 minutes.
Grease the bottom of 13x9 inch baking dish, then Layer 6 of corn tortillas on bottom
Cover the first layer with meat mix and sauce mix, then sprinkle with 1 - 1 1/2 cup cheese
Repeat the second layer.
Cover with foil and Bake for 30 minutes.
Remove cover and bake for additional 20 minutes with cheese is melted.
Sprinkle with green onions and olives on top before serving.
