Tender Collard Greens

 

INGREDIENTS

Per 8 bunches of collard greens

1 lb of thick cut Farmer John bacon

1 large sweet onion

Sprinkle Garlic power throughout the water mixture, black pepper just for taste, salt enough to give taste, 40 squirts of Tabasco sauce

 

DIRECTIONS

1. In a large soup pot: place 2 inches of water into pot.

2. On high heat boil the water, bacon, sweet onion, Garlic power, black pepper, salt, 40 squirts of Tabasco sauce for 10 mins, then place on low heat while deveining the collard greens

3. Wash collard greens thoroughly; then de-vein all leaves on each side

4. Wash greens again

5. Take a large hand full of greens and cut in to three sections, place each section into bacon mixture in pot, repeat until greens are all in pot.

6. Turn pot of greens and bacon mixture on high heat for 10 mins; stir bacon mixture and greens every 2-3 minutes, greens will shrink

7. After 10 mins of highly heat, turn greens down to medium heat for 30 minutes, stir greens and bacon mixture ever 5-10 minutes making sure the bacon and pot liquor is marinading throughout the greens

8. Lastly, turn the green on low / simmer heat for 2 hours and 30 minutes; stir greens and pot liquor every 30 minutes.

9. Turn off heat; let greens sit in pot for 30 minutes

10. Serve and eat !!
